Arugula Salad

Every time I make this salad I seem to get compliments so I thought it would be a good one to share! It’s proven to be a crowd pleaser and can be modified to fit your preference.

The main two things that you’ll need are

• Arugula

&

• Girard’s light champagne dressing (I think this is what makes it so good!)

The toppings that can be used are

  • Mini bell peppers
  • Cucumber
  • Avocado
  • Sliced black olives
  • Artichoke hearts
  • Chicken (try the already cooked balsamic vinegar and rosemary chicken from Trader Joe’s)

I usually add some pepper and a little Tajin on the avocado.

It’s healthy, delicious, and easy to make! I hope you enjoy it as much as I do!

Motivation Monday #38

Motivation Monday #34

Happy Labor Day! I hope that all of you hard workers were able to spend this Monday relaxing.

Since you’ll most likely be getting back to work tomorrow, this is really more of a Motivation Tuesday than a Motivation Monday. But hopefully it will help you to keep a positive attitude through the rest of the week.

So here goes,

Basically just do something each day to better yourself and have a lovely week!

Grateful for my Health

Incase you missed my last gratitude post, I promised to share something that I am grateful for each week until Thanksgiving and this week it’s my health.

For the past week or more I haven’t quite been feeling %100, I tweaked my neck somehow and my nerves were negatively affected. My arm was going numb and the pain traveled from the temple of my head all the way down to my shoulder blade. I was so scared that something more serious might be wrong with me that I was having anxiety attacks, sleeping horribly and barely eating.

After a massage and two visits to the chiropractor I’m feeling a LOT better! I also realized that I felt better when I found a project to keep me busy or when I got out of the house and did something productive. It’s amazing how strongly your brain can affect the way that your body actually feels and it can be hard to fight those feelings of fear and anxiety but I always tried to remind myself that I will feel normal again soon.

It sometimes takes a little pain or sickness to remind you that you need to really take care of yourself and appreciate your health. So don’t forget to take good care of yourself and feel free to share what you’re grateful for this week!

Motivation Monday #23

Happy Monday! I hope you had a nice weekend, mine was great because I pretty much just lounged around with my husband watching movies all day Saturday and Sunday.

But as nice as it was, it kind of made me feel bad for not doing anything productive. So for today’s motivation I want to remind you to:

Do something today that will benefit you tomorrow.

Whether you’re getting a list of chores done, working out, or going to school you will feel a lot better at the end of the day. They may not be the most pleasant things to do but they are rewarding and there’s no better feeling than accomplishing your goals.

Motivation Monday #19

Happy Monday! I hope all of the moms out there had a special day being celebrated yesterday. I had a lot of fun at a Mother’s day brunch with my mom, grandma and aunt. It’s always a good time when I’m surrounded by family.

Although it was a great day, I totally over-indulged at the brunch and ate way more than I should have. I can never say no to sweets! And that cheesecake was staring at me. From eating so many delicious desserts, I felt way too disgusting to even think about working out.

As the day was coming to an end I felt guilty for not treating my body with better care. So I made a list of things that I would like to try to do every day, and I wrote them out on the mirror in my room (with an expo marker) as a daily reminder.

This way, I will wake up each day with a clear reminder of what I need to do to have a happy life. Here’s what mine looks like:

( I started with a quote) “Wake up. Work Hard. Be Kind. Go to sleep”

  • Don’t stress the small stuff
  • Workout
  • Read books
  • Drink more water and green tea
  • Pray everyday!!!
  • Cook and Clean (AKA stop spending money at restaurants!)
  • Not too much caffeine
  • Smile often 🙂
  • Spend lots of time with family & friends

I know I have said it before but I love to be organized, part of that quality means that I am constantly making LISTS! I love having a visual to remind myself what I need to do. Use this Monday to make a list of your own, it may not look exactly like mine but thats ok. Just jot down the things that make you happy (or things that you NEED to get done) and make time to do them!

Motivation Monday #18

Happy Monday, it’s that time again for your weekly dose of motivation!

Being the planner that I am, I like to take the time on Sundays to plan out the things that I absolutely need to get done on the weekdays. Yesterday I was feeling yucky from being lazy all day and not having enough energy to do anything since I was out late having too much fun the night before. So one of my main goals for this week was to stick to my workout routine and go grocery shopping for some healthy meals.

I woke up this morning with a nasty head cold but I’m staying positive about being able to workout and get other things done. Since I had it planned out yesterday, I am not going to let a stuffy nose and headache keep me from doing what I need to do.

Make goals for yourself constantly, whether they are as small as doing the laundry on a certain day every week or as big as losing 20 pounds. Once you start to plan it will be easier for you to get into a routine and that will help to keep your life productive and make you feel great about yourself!

Motivation Monday #17

Happy last Monday of April! Summer is just around the corner and I’m feeling very grateful to be able to spend it in beautiful southern California.

It’s only one of the many things that I am grateful for these days. Life is about being happy, so make sure you find the time to do the things that make YOU happy!

It may be Monday, but it’s the perfect day to make plans for Friday. Give yourself something to look forward to and use that phone you’re always on to make plans with friends or family to do something that you love to do.

Monday is a reminder that if you work hard and get the important stuff done during the week, you’ll have all the more time to do what you WANT to do on the weekend.

Back to Basics

I’ve been thinking a lot lately about the amount of junk food I have consumed in my 23 years of living and I wonder, can I possibly stay away from it all together?

Am I mentally strong enough to say no to junk food and sweets?

Well as challenging as it sounds, I like to believe that I am capable of doing so. I mean, I’ve already cut out fast food and sodas, which I didn’t think would be possible either but it’s been almost two years now. I admit that I will occasionally indulge in a Sprite just to quench my thirst for something fizzy but for the most part I have replaced sodas with sparkling waters, which give the same fizzy effect. It’s all about finding a healthier alternative!

Aside from In N Out (my weakness), I have only had fast food a few times in the past couple of years and each time resulted in an upset tummy for me.

It’s amazing how intricate our bodies are. If we just start to pay attention to what our bodies are telling us, we will begin to learn just what it is that we need. This is another thing that I learned from reading The Body Book and I have just begun reading another fabulous book called, Go With Your Gut that also emphasizes the importance of listening to your body. Already, within the first few pages the author, Robyn Youkilis mentions how important it is to take a deep breath and listen to what your body wants before you start to eat. Are you really hungry? How much should you make? Etc.

Do you ever get a stomach ache or heart burn or any feeling of discomfort and think, what did I eat? This is always the first thought that comes to my mind, as it should be. What we put in our stomachs can have so many different effects on our bodies whether it’s just a little discomfort or something as serious as diabetes or heart disease. You’d think that we would all know better than to shove our faces full of unhealthily foods but for some reason it can seem impossible at times.

I used to have a serious weakness for hot Cheetos. I mean, I sort of still do but I told myself that the last time I had them would be the last time ever. As I have adopted a somewhat healthier eating style, my body has begun to react differently to those bad foods that I had previously eaten much more commonly. If I eat hot Cheetos now, I majorly regret it the next day when my tummy is in so much pain that I wish I could travel back in time and decide against the dang bag of Cheetos altogether.

I recently shared a viral video on my Facebook page showing different types of kids snacks that are linked to serious illnesses and even cancer. Yes CANCER. I hate the word, but I feel that it needs to be emphasized here. These are snacks that I have eaten since I was a kid and they continue to be placed in children’s lunch boxes to this day! Someone needs to do something to stop it. We all need to be educated on what types of foods absolutely do not belong in lunch boxes and more importantly our own bodies!

It irks me to think that huge corporations are banking on selling us these foods that are ultimately making us terminally ill. And we are falling for it, in fact we don’t even care. We don’t think far enough into the future and what our health will be like in a few years to even be bothered by what we are consuming today.

It can be compared to smoking. A person may start smoking as a teenager because it’s cool or makes them feel good in that moment, but we know now that smoking can have many unfortunate health effects in the long run. It effects your skin, teeth, lungs and can ultimately cause cancer. So why don’t people just stop? Well because it’s ADDICTING and the effects are not immediate so people don’t realize (or care about) how much damage they are doing to their bodies until it’s 30 years down the road and they’re being diagnosed with lung cancer.

In a very similar way, junk food, sweets and sodas can become ADDICTING. It’s not natural and it’s not right.

I always try to think about what people ate before all of these tempting snacks and sodas existed. Back when humans were hunter-gatherers and there was no Diet Coke or fast food. They had only what the earth provided for them, vegetables, fruits and occasionally some protein from an animal. And to drink- WATER, the ONE DRINK that God filled this earth with, the only drink that we NEED. It can be used to make tea or coffee, but it is a human necessity without which we could not survive. To think that at one point in my life, I probably went days at a time without drinking water, replacing it with sodas- it makes me so sad. But also happy that I have since learned and no longer fall prey to the soft drink and fast food industries.

So Back to Basics is what I have decided to title this post because- in life that is all we need. The Basics. Food from the soil of the earth, fresh water, a place to live and people to love. It can be hard to remember, I personally struggle all the time with wanting more stuff. I think “I have got to have this or I NEED that” to the point where I feel almost stressed out about not having it. I catch myself feeling this way and force myself to take a deep breath and say a little prayer to make that feeling go away. I know that I shouldn’t be so worried about material things but it is something that I always have a hard time with and I assume I will continue to but I will try my best not to. And that’s all we can do- TRY.

It’s the same with food. I’ll see a picture of a delicious dessert on the menu at some restaurant and think “I need that”. Then I will order it and feel so full afterwards that I’m just uncomfortable. It would be like if I were to go shopping for clothes and think “I need all of this!”, I would go home feeling guilty about spending so much money. Sure it’s satisfactory in that moment, like the taste of a chocolate fudge brownie or the feeling of getting a bunch of new clothes to wear, but eventually that feeling fades. It’s only temporary. WE are only temporary.

Our lives on earth are not forever. We all know this, and most of us hope to live out long lives rather than having them suddenly cut short. So we must be constantly conscious of the fact that these lives are temporary and if we want to get the most out of them then we need to do everything we can to make these bodies last. Your body is the vessel that carries you throughout your lifespan. GIVE IT WHAT IT NEEDS. Love yourself, drink water, be active, stay away from toxic treats and slowly but surely clean up your eating habits. You will look and feel so much better.
